- 2 slices whole wheat bread
- 2 oz chicken & turkey breast (substitute for roast beef)
- 1-1/2 oz Smart Balance low-fat, low-cholesterol cheese
- 1 tbsp low-fat mayonnaise
- 2 cups Romaine lettuce
- 1-1/2 tbsp fat-free Italian dressing
- 1 orange
As I mentioned at breakfast, we didn't have roast beef, so I substituted different cold cuts instead. We didn't have either enough turkey or chicken (perhaps from boyfriend's snacking), so I combined the two, for delicious effect. He apologized when I mentioned there wasn't enough meat, and I felt so jerky that I apologized back, saying hey, it's just food, then explaining it's not a big deal if we're out of one ingredient or another. I don't know why I ever made a big deal about these things.
Attempting to alleviate my guilt at being a bitch, I gave him the salad I'd prepared for myself and negotiated the less-than-fresh lettuce head to come up with a second serving. I really do not like salad these days (particularly when it consists mainly of gross lettuce), but after this past week, I'm willing to down as much salad as it takes to preserve normal digestive functioning.
The orange, incidentally, was absolutely out of this world. Who knew I was such a fanatic for oranges?
