- 4 oz tofu, 1/3 cup black beans, 1/3 cup corn, 1 bunch scallions, 1 tbsp chopped fresh cilantro, 1/2 tomato, 1-1/2 tbsp orange juice, 2 tsp soy sauce, garlic powder, red pepper flakes & lime juice
- 3/4 oz lite Tostitos
- 1 orange
I remember having great "digestive success" the last time I had this meal, and I also remembered enjoying it. The flavor was a little off, since I forgot the cumin and didn't let the tofu and such marinade before cooking it.
I've lapsed into a pretty grumpy depressive state since Sunday (maybe Saturday) and have felt exhausted all the time. Preparing meals feels like an extraordinary effort again, and I'm very unhappy about a bunch of things. I can't wait for this to pass and to start feeling like myself again.
