Lunch, Day Twenty


  • Beef Tostada, made with 3 oz lean ground beef, 1/4 cup tomato sauce, garlic powder, 1/2 medium tomato, shredded lettuce, 1/2 oz low-fat cheddar cheese, 1 whole wheat tortilla
  • 1/2 cup pineapple chunks

I had enjoyed this meal so much on Saturday that I thought I'd repeat it. Well that and because my boyfriend had something else, I had extra ground beef threatening to go bad in the fridge. It was relatively easy to prepare and very satisfying, a relief after what a disaster I'd made of breakfast.
