- "Eggplant Delight" with eggplant, onion, tomato over whole wheat pasta
- 2-1/2 oz low-fat mozzarella cheese
- 1 cucumber, diced with fat-free Ranch dressing
- 1/2 cup fruit cocktail
I was not very excited about this dinner until I saw what 2-1/2 oz of mozzarella cheese looks like - wow! I couldn't stand the thought of more lettuce, so I opted for a cucumber instead but was not able to finish it and convinced my boyfriend to eat the rest.
I felt a lot better about the diet having prepared the meals (mostly) at their allotted times. The last time I joined e-diets, I ended up quitting about this time because I got fed up with preparing the meals and buying head after head of lettuce. Blech, some variety, right? I wouldn't mind something more austere, like 1/4 cup of steamed vegetables, if it meant I didn't have to eat salads, which I'm bizarrely coming to hate, along with apples, pear, potatoes... it goes on.
I'm going to stick with it, though, even if I make shitty slow progress. I have to research my options to make it more convenient (and effective), and of course I have to step up my exercise... but it's a gradual process, so I will let it unfold over time.
