Dinner, Day Sixteen


  • Parmesan Chicken in Florentine Sauce - 3 oz chicken breast with 1/2 cup tomato sauce, 1/2 cup frozen spinach, minced garlic & garlic powder, served over 1-1/2 oz whole wheat penne with 1 tsp parmesan cheese
  • 1 cup mixed salad greens with 1 tbsp fat-free Italian dressing
  • 1 cup sliced strawberries and grapes

This was so good! I really love spinach cooked in sauce, and I felt the flavors were simple but very well-matched. It surprised me that this was a healthy dish, considering it consists of a few of my all-time favorite ingredients together, but in the right (very generous) proportions, there it is!
