- 1 oz whole-wheat angelhair pasta with 3-1/2 oz tofu, 1/2 bell pepper, 1/2 tomato, 1 tbsp low-fat ricotta cheese, oregano, parsley, garlic, garlic powder, ground red pepper & black pepper
- 1/2 cup chopped broccoli with 2 pats Country Crock spread
- 1/2 cup tropical fruit cocktail
This was absolutely fantastic, especially when I was so exhausted and knew I still had to go back to work for most of the rest of the night. Thankfully, my boyfriend was home for the evening, so he helped with preparation, and I was thrilled to sit down with him and enjoy this meal together. Because we'd added extra spices, it was suprisingly zesty and delicious - I ended up having at least a second glass of Diet Coke while we ate.
The broccoli was a stroke of inspiration, as I just didn't want any more salad. I never thought I'd find myself gleefully cheering for broccoli, but in lieu of salad, I was thrilled. I didn't use the called-for tsp of parmesan cheese in the pasta to account for the added fat of the butter spread, which was like a little bit of heaven.

hope you don't mind...but I just happened upon your blog...good for you! So many people talk about changing their lifestyle, but you're actually doing it! I used to be an emotional eater, but something switched inside me when I started running. Now I'm an emotional runner and am half the size I used to be. Keep up the good work!
