Lunch, Day Nineteen


  • Chicken Stir-fry made with 3-1/2 oz chicken breast, carrot, 1-1/2 celery stalks, broccoli, garlic, teriyaki sauce
  • 2 tbsp uncooked brown rice
  • 1/2 cup fruit cocktail

Good old stand-by, I was relieved to prepare something I knew how to cook. Of course I overcooked the brown rice, so it was unpleasantly crunchy, as if I were eating uncooked rice (very strange). I really loved the broccoli and was glad to have it.

My boyfriend went out of town today and I've been incredibly stressed and busy with work - preparing meals is becoming less and less of a priority, and I'll admit I've considered bailing on the diet at least a few times when I didn't feel like cooking. I have to remind myself, though, that this is a commitment to myself for at least a year and that if I bail, I'm just going to have to do it all over again. Plus, choosing not to eat the diet food doesn't mean I don't have to eat - I'll have to make something anyway, so it might as well be healthful.

I really wish I had some help with basic domestic tasks like washing the dishes or running down to the store though.
