Dinner, Day Twenty-One


  • 5 oz tofu, marinated in orange juice, soy sauce, garlic powder & ground red pepper
  • 1/3 cup canned black beans, rinsed
  • 1/3 cup frozen corn, thawed
  • 1 bunch scallions
  • juice of 1 fresh lime
  • cumin
  • 1 oz baked tortilla chips
  • 40 grams dried apricots

After class I got straight to work and didn't get home until pretty late. My boyfriend and his brother were here when I got back, and our apartment was a disaster. There literally wasn't a clean dish in the whole place, so I was rather frustrated to spend my time cleaning up and washing dishes. I ended up laying down for a while when another friend came by because I was just so damn exhausted - I woke up after he left and prepared this meal, which was quite delicious. Both my boyfriend and his brother sampled some and agreed it was really good.

I'm worried about the way I've been neglecting my body and how utterly exhausted I've been for the past few days. I know I've been working harder than usual because I am panicking for a deadline, but it's just feeling like too much. I'm sick of being so tired!
